Morning routine got you down? Revamp your sunrise ritual by prepping nutritious breakfast bars in advance, so you can spend more time doing the things you need (or, better yet, want) to do. These are chockful of superfoods, like quinoa, cranberries, pumpkin and sunflower seeds, and a protein blend for an extra bump of energy to fuel your day.
Toppings (optional): chocolate drizzle (see: Recipe tip)
- Line 1⁄4 Sheet Pan with 1⁄4 Sheet Pan Liner.
- In a large bowl, combine nut butter, honey, milk, vanilla, and protein blend. Fold in oats, cranberries, quinoa, pumpkin seeds, sunflower seeds, and chia seeds until evenly combined. If mixture is too dry, add more milk, 1 tbsp at a time, until the mixture holds together without crumbling.
- Transfer to prepared pan, spreading evenly to the edges and pressing down firmly. If desired, drizzle on melted chocolate.
- Freeze 30–60 min. Using a butterknife or silicone spatula, slice into 12 bars. Store in an airtight container in the fridge for up to 5 days, or individually wrap and freeze.
To make the chocolate drizzle, in a small bowl, melt 2 tbsp chocolate chips (your choice) with 1 tsp coconut oil in the microwave on high. Microwave in 20-sec intervals until melted, stirring between each interval, about 40–60 sec.
Serve with 1⁄2 cup plain 2% Greek yogurt and 1 cup berries.
