small lemon, divided – juice 1/2, mince 1/2

Sea Salt, freshly ground

fresh lemon juice
1 cup
raw couscous, cooked and cooled
1 tbsp
1 tsp
1 medium
carrot, finely chopped
1 cup
chopped dried apricots, dates, and prunes
1 cup
green olives, pitted and chopped
14 cup
olive oil
2 tbsp
chopped fresh parsley, optional
Sea Salt, to taste
Black Pepper, freshly ground, to taste

Preparation
  1. In a large bowl, marinate onion and lemon mince in lemon juice and Salt, approximately 5 minutes.
  2. Add remaining ingredients, and toss to combine.
  3. Season with Salt and Pepper, and serve at room temperature.
Tips

You can make it a day ahead – wrap and refrigerate until ready to serve.

Cook Once, Eat Twice: Toss this salad with leftover chopped chicken for a filling main course.
