- In a food processor, add chickpeas, nut butter, maple syrup, oil, oats, and protein blend. Pulse until smooth, scraping down the sides as necessary. If needed, add water, 1 tbsp at a time, until mixture comes together.
- Transfer to a bowl and stir in chocolate chips.
- Line 1⁄4 Sheet Pan with 1⁄4 Sheet Pan Liner. Roll dough into 12 balls and place on pan. Refrigerate 15 min.
These are a great make ahead breakfast for the week. Refrigerate them in a sealed container—they taste even better when they’ve had time to chill longer!
Serve with 1 cup berries.
