Ingredients


Makes: 4 servings
  • 1 pkg Pakora Mix (Pkg of 3)
  • 1/2 C (125 ml) hot water
  • 2 Tbsp (30 ml) lemon juice
  • 1 carrot
  • 1 zucchini
  • 3 Tbsp (45 ml) oil

Preparation


 
  • In a large bowl, combine mix, water, and lemon juice. Let stand 5 min.
  • Meanwhile, peel and grate carrot. Grate zucchini. Fold both vegetables into mixture.
  • Heat oil in a fry pan over medium heat. Cook in batches to avoid overcrowding the pan. Using a tablespoon, drop batter into pan. Cook until golden, approximately 2 min per side.

Recipe tip: Mix up the veggies! Try sliced onion, frozen peas, chopped spinach, or cauliflower in your pakoras.
