Ingredients


Makes: 4 servings
  • 3 Tbsp (45 ml) frozen orange juice concentrate, thawed
  • 1 C (250 ml) Chicken Broth, prepared
  • 1 C (250 ml) whole-wheat couscous
  • 2 tsp (10 ml) Curry Seasoning
  • 1 C (250 ml) canned chickpeas, rinsed and drained
  • 1/4 C (60 ml) Cherries and Berries
  • 4 green onions, chopped
  • 2 bell peppers, diced
  • 1/2 C (125 ml) chopped fresh basil
  • 1-2 Tbsp (15-30 ml) extra-virgin olive oil
  • 1 Tbsp (15 ml) fresh lemon juice
  • 2 tsp (10 ml) orange zest
  • 1 Tbsp (15 ml) honey
  • 1 tsp (5 ml) Minced Garlic

Preparation


 
  • Bring Chicken Bouillon to a boil in Multipurpose Pot - 8 C. Remove from heat.
  • Stir in couscous and Madras Curry. Cover and let stand 5 minutes. Fluff with a fork and allow to cool in a large mixing bowl.
  • Stir in chickpeas, Cherries & Berries, onions, peppers and basil.
  • Whisk remaining ingredients in a small mixing bowl. Pour over couscous mixture and toss to coat. Serve.

Easy Substitutions:• Try Curry Dip instead of Epicure Madras Curry. • Try using dried cranberries instead of Cherries & Berries.

Serving Suggestion: Serve with grilled fish.
